Ingredients
1 whole cucumber, chopped
1 whole tomato, chopped
2 whole green onions, sliced
1/4 cup red onion, diced
10 kalamata olives, sliced
1 tbsp mayonnaise or vegannaise
1 tbsp Greek or Italian seasoning
1/2 cup cooked wheat berries
1/4 cup feta cheese
Salt and pepper to taste
Instructions
Mix ingredients in a bowl.
Notes
Use mayonnaise carefully if you plan on setting the salad aside for any period of time. Mayo blends with liquid from vegetables.
